Almond Butter Chocolate Chip Cookies

Preheat the oven to 350 degrees F.

 

Line a baking sheet with parchmentpaper.  Combine all of the ingredients, except chocolate chips, in a food processor and process until very smooth. Scrape down the sides part way through processing. Transfer the dough to a large bowl and stir in the chocolate chips. 

 

 Wet your hands and form the dough into 1 1/2" balls. Arrange the dough balls on the prepared baking sheet and lightly flatten using a fork.

Bake until cookies start to brown slightly, about 10 minutes. Let the cookies cool completely before handling. Store in an airtight container.
