Asian Turkey Lettuce Wraps

Heat olive oil in a large frying pan over medium-high heat. Add ground meat, garlic and ginger. Using a wooden spoon, stir and break up the meat until it is cooked through, about 8 minutes. Add red pepper and cook 2 more minutes, then drain excess liquid. Meanwhile, in a bowl, stir together nut butter, curry paste and boiling water. Pour this sauce over the meat mixture and cook until most of the liquid is absorbed. Stir in snow peas and green onion. Cook for about 30 seconds. Remove from the heat and serve wrapped in lettuce leaves.
