Banana Pancakes

Mash banana in a bowl until smooth. Mix in eggs, coconut flour and water, until fully combined.

 

Heat coconut oil in a non-stick frying pan over medium-high heat. Pour, or spoon, about 1/4 cup of batter on the pan for each pancake. Cook for 4 minutes, or until underside is golden. Flip over with a spatula and cook for 1-2 minutes, or until pancakes are fully cooked.

 

Transfer pancakes to a plate and top with a sprinkle of cinnamon. Serve immediately.
