Cashew Chicken

Combine chicken, soy sauce, ginger, garlic and red pepper flakes, if desired,in a large shallow dish. Cover, and let marinate for 30 minutes at roomtemperature, or in the fridge for up to 8 hours.  

 

Heat a large wok over medium heat and add olive oil. Sauté the chicken andmarinade in the wok for 5 minutes. Add carrots, broccoli and onion. Sautéfor another 5 minutes. Add broth and cook for 3 minutes, stirringoccasionally. Add cashews and cook for 2 more minutes until thoroughlyheated. Serve hot.
