Cauliflower Mash

Steam cauliflower florets until just tender. Transfer cauliflower to a colander to drain excess water. Place cooked cauliflower in a large bowl and add olive oil/butter, garlic, nutmeg, salt and pepper.  

 

Using a potato masher, mash all ingredients together until desired consistency is reached. Serve cauliflower mash with a sprinkling of freshly chopped chives.

Ingredients:

head of cauliflower, trimmed and cut into florets: 1

nutmeg : 0.25 teaspoon
