Chicken Meatballs

Set oven to 400°F.

 

In a medium bowl, stir together almond flour, parsley, egg, tomato paste, cheese, oregano, salt and pepper. Add chicken and gently stir to combine. With damp hands, form the chicken mixture into 12 meatballs. Place the meatballs on a baking dish coated with olive oil. Bake for 20–22 minutes until cooked through. Try serving over zucchini noodles with no-sugar-added marinara sauce.
