Chicken Skewers with Peanut Satay Sauce
In a large bowl, mix soy sauce, lime juice, garlic, ginger, cumin andcoriander. Cut chicken into chunks and toss into the mixture. Marinate in thefridge overnight. To make sauce, heat olive oil in a saucepan over medium-high heat. Add onion, garlic, curry paste, soy sauce and lime juice. Sauté for6 minutes. Whisk in peanut butter and milk. Cook for another 5 minutes.Pour in a serving dish. Soak skewers in water. Preheat BBQ to medium-highheat. Assemble skewers, alternating chicken, onion chunks and mushrooms.Grill skewers for 5 minutes on each side. Serve hot with sauce for dipping.
