Curried Chicken

Season chicken with garlic, salt and pepper. Marinate in the fridge for 1hour.

 

  Heat olive oil in a skillet over medium heat. Add 1/2 cup chicken broth and curry powder to the pan. Stir with a wooden spoon until smooth. Add the marinated chicken and stir to coat. Cook for 10 minutes.  

 

Add tomatoes and onion. Cook for 5 minutes. Add spinach, green beans andremaining chicken broth. Stir, then simmer for 10 more minutes, and serve.

skinless, boneless chicken breasts, cut into large chunks : 9 oz

garlic cloves, minced : 2
