Curried Mixed Vegetables
Add oil to a pan on medium heat. Add mustard seeds to hot oil until they burst. Add yam and pan-fry with mustard seeds for 2 minutes. Add water and cook, covered, until yam pieces are almost cooked through. Add in all other ingredients. Sauté, uncovered, until vegetables are cooked and tomatoes are pulpy. Serve hot.

medium purple yam, peeled and cubed : 1

water : 1 cup

large tomatoes, sliced : 2

cauliflower cut into bite-sized florets : 3 cup

1 inch piece of ginger, crushed : 1

turmeric powder: 1 teaspoon

chili powder : 0.25 teaspoon

sea salt : 0.5 teaspoon

hot pepper sauce : 0.5 teaspoon
