Dijon Crusted Cod
Preheat the oven to 350 degrees F.
Grease a small baking dish with olive oil and place fillets in the dish in a single layer. In a small bowl, mix together egg white, mustard, horseradish, lemon juice, ground almond meal and thyme. Spread the mixture over the cod to coat the fillets in an even layer.
Bake for 20 minutes, uncovered, and let cool for 5 minutes before serving.
