Egg, Tofu and Sweet Potato Frittata

Preheat the oven to 350 degrees.

 

Crack eggs into a large bowl, add egg whites and crumble in the tofu. Add tomatoes, salt and pepper. Using a hand blender, whirl mixture until well blended. Stir in sweet potato, red pepper and broccoli. Pour mixture into an 8x8 inch baking dish lined with parchment paper. Sprinkle with cheese and bake for 35–40 minutes. Let sit for 5 minutes, cut into 4 squares and serve.
