Fresh Shrimp Salad
Fill a large pot with water, add salt and bring to boil over high heat. Stir in shrimp and cook until they are bright pink on the outside and the meat is no longer transparent in the centre, 3–5 minutes. Drain and set aside to cool. Combine grapefruit, onion, avocado, tomato, lime juice, fish sauce, chili pepper and stevia in a large bowl. Toss in cooled shrimp and top with cilantro. Serve.

small red onion, thinly sliced : 1

large avocado, peeled ad diced into 0.5" pieces : 1

sliced cherry tomatoes : 4

lime juice : 2 tablespoon
8)
Thai fish sauce : 2 tablespoon
9)
fresh red chili pepper, finely chopped : 1

pinch of stevia for taste :

chopped fresh cilantro (otpional): 1 tablespoon
