Fruity Quinoa Crumble

Preheat the oven to 375 degrees F. 

 

 Combine peaches, blackberries and cherries in a large bowl. Whisk together honey/stevia, 1 tbsp. coconut oil and vanilla extract in a small bowl and pour over the fruit mixture.

 

Mix to coat the fruit evenly, then pour the fruit into a baking dish or individual ramekins.  

 

In another bowl add quinoa, almond flour, cinnamon, nutmeg and 1 tsp.coconut oil. Mix together with your fingertips, then sprinkle the quinoa crumble over the fruit. Bake for 25-30 minutes until the crumble is golden and the fruit is bubbly.

 

Let cool for 15 minutes before serving.
