Goat Cheese, Pistachio & Beet Salad

Divide baby mixed greens between two plates. Top the baby mixed greens with carrot, beet, pistachios and goat cheese.  

 

To make the dressing, whisk vinegar, honey and salt together in a small bowl. Slowly drizzle in olive oil, while whisking vigorously, until all of the oil is added. 

 

Drizzle the honey vinaigrette over the two salads and serve.
