Greek Fish Florentine

Preheat oven to 350 degrees F.

 

Place fillets and tomatoes in a glass baking dish. Sprinkle with garlic, parsley and lemon juice. Cover with tinfoil. Bake for 15-20 minutes, until fish is opaque and flakes easily with a fork. In a medium-sized skillet, over medium-high heat, sauté shallots in oil for 1 minute. Reduce heat to medium. Add spinach and cook until wilted, about 4 minutes. Stir in goat cheese. Heat until cheese is melted and evenly distributed.

 

To serve, divide spinach mixture between two plates and top each with a fillet and tomatoes.
