Herb-Roasted Lamb Chops

Mix garlic, herbs, salt and 1 1/2 tbsp. olive oil together in a large bowl. Add lamb chops and toss to coat. Marinate covered, at room temperature, for 30–60 minutes (optional, but recommended for better flavour).

 

Preheat the oven to 400°F.

 

Heat 1 tablespoon olive oil in an oven-proof frying pan, over high heat. Add the coated lamb chops and cook until browned on each side, about 3 minutes per side. Transfer the pan to the oven and roast the lamb chops for 10 minutes. Move the chops to a platter and cover with foil. Let rest for 10 minutes and serve.
