Indian Cauliflower Rice
Remove cauliflower leaves and grate the white part (or blitz in a food processor). Heat oil in a large frying pan or wok. Add onion and green beans. Cook over a medium heat until the onion is fairly soft, 2–3 minutes. Add cauliflower rice to the pan. Add the spices and season with salt and pepper. Add tomatoes and cook about 8–10 minutes, until the tomatoes are beginning to soften, stirring occasionally. Garnish with cilantro to serve.
