Kale Caesar Salad
Wash and chop kale leaves and place in a large salad bowl. Preheat oven to 400 degrees F. Chop bread slice into crouton-sized chunks.Toss bread chunks with olive oil, garlic, Italian seasoning and salt. Place on a baking sheet in an even layer, then bake in the oven for 5-8 minutes, tossing once, until golden and crispy. Remove croutons from the oven. Place ingredients of Caesar Dressing, except for olive oil, into a food processor or blender. Blend until smooth. Blend again, drizzling in olive oil while the machine is running, until all of the oil is incorporated and the dressing is smooth. Pour the dressing over the kale and toss until the kale is evenly coated. Serve sprinkled with homemade croutons.
