Lemon-Chili Seared Scallops on a Bed of Greens
Pat scallops dry with a paper towel. Season scallops with salt, pepper, garlic and red pepper flakes.
In a large skillet, heat olive oil over medium-high heat. Add scallops to the pan, flat side down. Sear for 2 minutes, until golden, then flip over and sear the other side for 2 minutes. Add lemon juice and white wine to the pan and swirl to mix. Tilt the pan and spoon some of the liquid over the scallops. Remove the pan from the heat and set it aside.
Divide lettuce between two serving plates. Place scallops on top of the greens and drizzle with liquid from the pan. Serve.
