Lime Grilled Chicken with Avocado Salsa
In a bowl, combine garlic, sea salt, pepper, 4 tbsp. lime juice, 3 tbsp. cilantro and 2 tbsp. olive oil. Add chicken, tossing to coat evenly. Cover and refrigerate for 30 minutes. Meanwhile, combine tomatoes, onion, jalapeno peppers, vinegar, 2 tbsp. lime juice, 1 tbsp. cilantro and 2 tbsp. olive oil. Dice avocado into cubes and gently stir into salsa mixture. Cut chicken breasts in half to create 8 pieces. Pound each to 1/2 inch thickness. Pre-heat grill to medium-high. Grease grill with 1 tsp. olive oil and place chicken on grill. Grill until chicken is no longer pink inside, about 3 minutes per side. Serve chicken topped with salsa.
