Mama Gina's Sweet Potato Gnocchi

Boil sweet potato with skin on. Allow to cool completely and peel skin off. Mash in a large bowl until smooth. Add sea salt, olive oil, chopped herbs, egg, egg yolk, nutmeg and baking powder. Mix together with a fork until smooth. Add flour gradually, mixing until it forms a ball of dough and is no longer sticky.

 

Knead dough on a floured surface for 5 minutes. Divide into four balls of dough. Using your hands, roll out each ball of dough into a long cylinder (1inch thick). Cut dough into inch-long pieces to form individual gnocchi.

 

Bring a pot of salted water to a boil. Drop gnocchi into the boiling water and cook until they float to the surface. Remove gnocchi from water using a strainer and toss them in a tomato or pesto sauce while they are still hot, then serve.
