Maple-Balsamic Veggie "Fries"
Set the oven racks in an oven to the upper and lower thirds. Preheat the temperature to 425 degrees F, and line 2 baking sheets with parchment paper. Add sliced vegetables and thyme sprigs to a large bowl. In a small mixing bowl, whisk together olive oil, maple syrup, vinegar, salt and pepper. Pour the liquid mixture over top of the vegetables and mix well to coat evenly. Arrange the coated vegetables in a single layer on the baking sheets. Roast both pans in the oven for 20 minutes, then flip the veggies, and return pans to the oven, switching their positions on the racks. Bake for another 15-20 minutes and remove from the oven. Discard the thyme leaves, and serve the fries hot.
