Mediterranean Broccoli Slaw
In a large bowl mix together all of the salad ingredients. Top salad with dressing and stir to coat well. Cover and refrigerate salad for a minimum of 2 hours to develop flavour.
Ingredients:

broccoli, cut into small florets : 5 cup

artichoke hearts, in olive oil, sliced : 0.5 cup
3)
sun-dried tomatoes in olive oil, chopped and oil squeezed out (for dressing) : 0.5 cup
4)
pitted kalamata olives, halved : 0.5 cup
5)
diced red onion : 0.33 cup
6)
roasted pumpkin seeds : 2 tablespoon
7)
creamy Mediterranean dressing : 0.75 cup
