Mint Chocolate Chip Ice Cream

*Peppermint extracts may vary by brand, so start off with a small amount and adjust to taste.

 

Place all ingredients, except chocolate, in a high-powered blender and blend until smooth and creamy. Stop to scrape down sides of blender, as necessary. Taste test at this point and make any necessary adjustments.

 

Fold in dark chocolate pieces, transfer to a freezer-safe container, and allow to set in the freezer for 4-6 hours.
