Poached Eggs in Spicy Tomato Sauce

Heat oil in a large skillet over medium heat. Add garlic, onion, jalapeno and green pepper. Cook, stirring occasionally until the onion starts to turn translucent, about 5-7 minutes.  In a medium bowl, combine tomatoes, paprika, cumin, cayenne pepper and salt. Add the tomato mixture to the skillet and stir. Cover and cook on medium heat for 5 minutes, stirring occasionally.  Form 5 hollows in the tomato mixture and carefully crack an egg into each hole. Cover and cook until the eggs set, 5 to 7 minutes. Serve hot.
