Raisin Cookies

Preheat the oven to 350 degrees F

 

Place shortening and egg in a bowl, using an electric hand mixer, blend together on high for 1 minute. Add honey and vanilla and mix until smooth. Place cinnamon, nutmeg, flours, baking soda, salt, flax seeds, raisins and coconut in a small bowl, and stir to combine. Slowly add the dry ingredients to the wet and mix until evenly combined.

 

Using a large spoon, drop balls of dough the size of golf balls onto a baking sheet lined with parchment. Use wet fingers to gently press the cookies down to 1/4-inch thick. Bake for 12 minutes.
