Roasted Garlic Guacamole

Place unpeeled garlic cloves in a skillet. Cook over medium heat until softened, turning occasionally, for about 15 minutes. Let cloves cool, then remove skins and chop finely. 

 

 Cut avocados in half, remove pits, then scoop the flesh into a large bowl. Add garlic and all remaining ingredients. Mash to desired consistency.  

Transfer avocado to a serving dish and serve with tortilla chips, chopped veggies, or alongside any Mexican dish.
