Roasted Haddock and Vegetables

Preheat oven to 375 degrees F.  In a shallow glass baking dish, toss together olive oil, asparagus, zucchini, tomatoes and garlic.

 

Arrange halibut fillets on top of the vegetables and season with oregano, salt and red pepper flakes.  

 

Cover with tinfoil and bake for 12 minutes. Remove tinfoil and bake for another 5 minutes. Let cool for 5 minutes and serve.
