Shepherd's Pie

Topping: Boil, drain and mash purple yams. Add salt and set aside with a foil covering.

 

Filling: Add olive oil to pan on medium heat. Add onion, garlic and carrot, stirring for 2–3 minutes before adding in ground beef. Cook beef until browned and cooked through, then drain off any excess oil. Add in marinara sauce, peas and pepper. Turn down to low heat, cover and let simmer for 2 minutes. Place cooked ground beef mixture with gravy in a baking dish and top with warmed mashed purple yam. Serve.
