Spinach-Stuffed fish

Heat oil in a saucepan. Add garlic and onion. Sauté for a minute or two. Add spinach to the pan and sauté until all water evaporates, about 3 minutes. Take off the heat. Add feta. Season with nutmeg, salt and pepper. Let it cool. Season fish with salt and pepper. Lay each fillet flat and put 1/4 of the spinach mixture at one end of the fillet. Gently roll up the fillet, starting where the stuffing is. Secure with 1–2 toothpicks. Place fish seam down on an oil-sprayed pan and sprinkle with lemon zest. Bake at 400°F for 20 minutes and serve
