Tofu Stir-Fry
To make stir-fry sauce, purée all of the sauce ingredients together in a food processor until smooth. Set aside. Cut tofu into slices and press with a paper towel to remove excess moisture. Wait a few minutes and press again. Cut the tofu slices into small cubes. Heat oil in a large nonstick frying pan over medium heat. Add the tofu and about 1/4 cup of the stir-fry sauce. Pan-fry the tofu until golden brown. Remove tofu from the pan and place in a bowl. Add vegetables to the frying pan with the remainder of the stir-fry sauce. When the vegetables start to soften, add the tofu back into the pan. Stir for about 1 minute and serve.
