Tomato & Balsamic Chicken

Preheat oven to 350 degrees F.

 

Sprinkle 1 tsp. of parsley and 1 tsp. of basil evenly over the bottom of a 9x13" baking dish. Arrange chicken breast halves in the dish, and brush balsamic vinegar evenly over top of them. Sprinkle chicken evenly with garlic slices.

 

In a small bowl, mix the remaining 2 tsp. parsley and 2 tsp. basil with sea salt and red pepper flakes. Sprinkle this mixture along with the cherry tomatoes over the chicken breast. Cover with tinfoil and bake for 25 minutes. Remove tinfoil and continue baking 15 minutes, or until chicken juices run clear.
