Veggie Sloppy Joe in Lettuce
In a large frying pan, heat 1 tablespoon of oil over medium-high heat. Sauté mushrooms until they are browned. Remove from the pan and set aside. Add the remaining 1 tablespoon of oil to the pan and sauté onion until translucent. Add carrot, celery and bell pepper. Cook over medium heat for 5 minutes. Place the mushrooms back in the pan and add lentils, Worcestershire sauce, marinara sauce and mustard. Turn heat to low and stir. Season with salt and pepper to taste. Place the mixture into lettuce leaves and serve.
