Zucchini Bread

Preheat oven to 350 degrees F.

 

Lightly grease an 8.5" by 4.5" loaf pan with coconut oil and place a piece of parchment on the bottom.  

Mix together almond flour, cinnamon, baking soda, sea salt, nutmeg and allspice in a small bowl. 

 

 Place eggs, honey and banana in another bowl and, using an electric hand mixer, blend on medium speed for 1 minute then. Add zucchini and raisins. Continue mixing, on low speed while slowly adding dry ingredients until they have all been incorporated. Spoon batter into prepared loaf pan and bake for 40 minutes.
