Poached Cod with Pesto & Green Beans

Heat olive oil in a large skillet over medium-high heat. Add green beans and chopped shallot. Sauté for 2 minutes.

 

Sprinkle both sides of cod fillets with salt and pepper. Spread bean sauté into a flat layer in the pan and place the cod on top. Cook, covered with a lid, over medium-high heat for 6 minutes. Use tongs to transfer the fish fillets and bean sauté to 4 serving plates.  

 

Add chicken broth to the pan and bring to a boil. Reduce heat to medium-low and simmer for 5 minutes. Stir in prepared pesto. Spoon the sauce over top of the fish and green beans to serve.
