Turkey Stuffed Peppers

Cut tops off red peppers and remove seeds. Place each pepper on a large square of tinfoil. Preheat the oven to 325 degrees F.  Place ground turkey, onion and garlic in a sauté pan. Sauté over medium-high heat for 8 minutes, then add cooked rice and salsa. Stir and sauté for another 5 minutes, then remove the pan from the heat.  Stuff each pepper evenly with the turkey mixture. Top each pepper with 1 tbsp. of crumbled goat cheese and wrap each pepper in their tinfoil square.Place peppers in the oven and bake for 20 minutes. Let cool for 5 minutes and serve.
